Tomato Egg Noodle Soup

A comforting Chinese-style tomato egg noodle soup made with fresh tomatoes, fluffy scrambled eggs, garlic, green onions, noodles, and fresh cilantro. Finished with a splash of maple syrup to perfectly balance the tomato flavor.

Ingredients
  

  • 5 tbsp vegetable oil
  • 4 large tomatoes diced
  • 4 garlic cloves minced
  • 1 bunch green onions sliced
  • 70 ml tomato paste
  • 5 –6 eggs
  • Avocado oil spray for cooking eggs
  • 200 g noodles or vermicelli
  • liters water or chicken broth
  • ¼ tsp black pepper
  • 1 tbsp pure maple syrup
  • 1 bunch fresh cilantro chopped

Equipment

  • Large pot or Dutch oven
  • Frying pan
  • Cutting board
  • Sharp knife
  • Wooden spoon
  • Measuring spoons
  • Measuring cup

Method
 

  1. Heat a frying pan with avocado oil spray and scramble the eggs until just cooked. Set aside.
  2. Dice the tomatoes, mince the garlic, slice the green onions, and chop the cilantro.
  3. Heat the vegetable oil in a large pot.
  4. Add the garlic and green onions.
  5. Cook for about 1 minute until fragrant.
  6. Add the diced tomatoes.
  7. Cook for 5–7 minutes until they soften and release their juices.
  8. Stir in the tomato paste and cook for another minute.
  9. Pour in the water (or chicken broth).
  10. Bring to a gentle boil.
  11. Season with black pepper.
  12. Add the noodles and cook according to package directions.
  13. Stir in the maple syrup.
  14. Mix well.
  15. Add the scrambled eggs back into the soup.
  16. Turn off the heat and stir in the fresh cilantro.
  17. Serve immediately while hot.

Notes

  • Don't overcook the noodles—they continue softening in the hot soup.
  • Fresh tomatoes provide the best taste.
  • Add chili oil if you enjoy spicy soups.
  • The maple syrup shouldn't make the soup sweet—it simply balances the tomatoes.
