Ingredients

For the Rice
  • 2 cups 400 g uncooked brown rice (or white rice)
  • Water
For the Beef Marinade
  • 12 oz 350 g beef, thinly sliced
  • 1 tbsp cornstarch
  • 2 tbsp light soy sauce
  • ¼ tsp ground black pepper
Vegetables
  • lb 700 g celery, cut into 1-inch (2.5 cm) pieces
  • 4 pcs large garlic cloves minced
Seasonings
  • 4 tbsp vegetable oil
  • tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • Chili flakes or chili powder optional, to taste
  • tbsp light soy sauce

Equipment

  • Large wok or large skillet
  • Medium saucepan or rice cooker
  • Sharp chef's knife
  • Cutting board
  • Mixing bowl
  • Measuring spoons
  • Measuring cups

Method

  1. Rinse the rice 3–4 times with warm water until the water becomes almost clear.
  2. Cook the rice according to your preferred method or follow the stovetop instructions below.
  3. Slice the beef into thin strips about 1–1½ inches (2.5–4 cm) wide.
  4. Combine the beef with the cornstarch, soy sauce, and black pepper. Mix well and let it marinate while preparing the vegetables.
  5. Cut the celery into 1-inch (2.5 cm) pieces and finely mince the garlic.
  6. Heat the vegetable oil in a wok or large skillet over medium-high heat. Stir-fry the beef until it's almost fully cooked.
  7. Add one-third of the minced garlic and cook for about 30 seconds.
  8. Add the celery and stir-fry for 5–7 minutes, stirring occasionally.
  9. Reduce the heat. Add the salt, black pepper, paprika, chili (if using), soy sauce, and the remaining garlic. Stir everything together and cook for another minute.
  10. Remove from the heat and serve immediately with steamed rice. Kimchi makes an excellent side dish.

Notes

• Slice the beef against the grain for the most tender texture.
• Don’t overcook the celery—it should remain slightly crisp for the best flavor and texture.
• Prepare all the ingredients before heating the wok, as stir-frying moves quickly.
• Fresh garlic provides the best flavor.
• This recipe also works well with jasmine rice, white rice, rice noodles, or cauliflower rice.

🍚 How to Cook Rice Without a Rice Cooker

Cooking perfect rice on the stovetop is easier than you might think.

  1. Rinse the rice 3–4 times with warm water until the water runs almost clear.
  2. Transfer the rice to a saucepan with a tight-fitting lid.
  3. Add enough water so it sits about one finger joint (approximately ¾ inch / 2 cm) above the surface of the rice.
  4. Bring the water to a gentle boil over medium-high heat.
  5. Once boiling, immediately reduce the heat to the lowest setting and cover with the lid.
  6. Cook for 35–40 minutes for brown rice or 15–18 minutes for white rice.
  7. Turn off the heat and let the rice rest, covered, for another 10 minutes.

Avoid lifting the lid while the rice is cooking, as this releases steam and can affect the final texture.
