Pat the ribs dry with paper towels.
Season generously with your favorite spices and rub them thoroughly into the meat.
Place the ribs in a roasting bag or sealed container and marinate for at least 1 hour, or up to 24 hours in the refrigerator.
Preheat the oven to 180°C (350°F).
Bake the ribs for 1 hour.
While the ribs are baking, prepare the glaze by mixing the light soy sauce, Sriracha, ketchup, dark soy sauce, and honey in a bowl.
Remove the ribs from the oven and brush generously with the glaze.
Return the ribs to the oven and bake for an additional 25–30 minutes at 180–200°C (350–400°F), until caramelized and beautifully glazed.
Let the ribs rest for 5 minutes before serving.
